Beautiful Smoked Peppers

These peppers smoked over oak for about 5 hours. They achieved a rather amazing smokey/roasted flavor. I let them rest overnight to get the skins to separate. The next day I peeled them and made the most awesome pepper sauce with some other garden tomatoes and herbs and spices and of course wine. Which was a 07 Cabot Confluence.
